Comfort food

 
Comfort food is any kind of food that makes you feel comfortable, pleasant and satisfied. By extension, determining what is on the comfort food list is something personal. In my case, the most comforting dessert ever is carrot cake with cream cheese topping (honestly, I am not that into chocolate). Its flavor is unique and remarkable, because of the touch of cinnamon in the dough, and in addition, the cream cheese topping is fuzzy. Click on read more to see the recipe.

Cream together

  • 1 cup sugar
  • 3/4 cup oil
  • 2 eggs (one at a time)
Add
  • 1 1/2 cup graded carrots
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon soda
Pour it into a greased and floured cake pan and bake at 350 ºF until it is firm (35 minutes approximately).

For the frosting:
Beat together 
  • 1 1/2 oz cream cheese
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla
Gradually add:
  • Powdered sugar (until the right consistency is reached).
(In my case, I also put some milk to get a glazing consistency).
