Cream together
- 1 cup sugar
- 3/4 cup oil
- 2 eggs (one at a time)
Add
- 1 1/2 cup graded carrots
- 1 cup flour
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon soda
Pour it into a greased and floured cake pan and bake at 350 ºF until it is firm (35 minutes approximately).
For the frosting:
Beat together
- 1 1/2 oz cream cheese
- 1 tablespoon butter
- 1/2 teaspoon vanilla
Gradually add:
- Powdered sugar (until the right consistency is reached).
(In my case, I also put some milk to get a glazing consistency).
